Melted Cabbage

:: Ingredients ::

2 Small cabbage, quartered

10 Cloves of garlic, peeled

4 Shallots, peeled and halved

1/2 c. Acidic, dry white wine

1/2 c. Chicken or veg. broth

1/2 c. Olive oil

Salt

Pepper

:: Directions ::

- Preheat oven to 300 degrees F

- In large, high-sided skillet, heat olive oil over medium high heat and sprinkle 1 tsp salt and 1/4 tsp pepper into pan. 

- Place cabbage wedges in pan, cut side down (squeeze 'em in, they will 'relax' and soften as they cook

- Brown both cut sides, approximately 6-7 mins (resist the urge to move them too much- they will fall apart)

- Using tongs, flip cabbage wedges and tuck garlic and shallots into the pot. Cook to brown for another 6-7 min

- Pour in the wine and broth and bring to a boil

- Add salt and pepper, then cover with tight-fitting lid

- Transfer to oven and cook until softened and deep brown in color, approximately 2 hours

- Serve with pan juices, feel free to top with butter to deepen flavor

Don't hesitate to improvise and use ingredients you have on hand!
I have used a sweeter wine and apple cider vinegar in place of a dry wine.
This recipe can be a meal on its own, a great side, or a nice addition to Root Veggie Panzanella.
