Cucumber Salad

:: Ingredients ::

1 lb cucumber, thinly sliced on mandoline

1 1/2 tsp salt

2 1/2 tbsp red wine vinegar

1/4 tsp sugar (optional)

1/2 small onion or

3-4 scallions, thinly sliced

fresh herbs (optional)

black pepper (optional)

:: Directions ::

- Place sliced cucumbers in colander over bowl and toss with salt. Let rest for at least an hour, up to 24hrs

(Tip: reserve the juice for use in a cucumber margarita- the salty cucumber juice goes well with tequila)

- Toss strained cucumbers and with red wine vinegar, sugar (if using), onions or scallions, fresh herbs (dill works great here!), and pepper to taste.

* Another variation boasts Asian inspired flavors. Just use rice vinegar in place of red wine vinegar, add some sesame seeds and 1/4 tsp of sesame oil.

Don't hesitate to improvise and use ingredients you have on hand!
The longer you let the cucumbers rest with the salt, the crisper they will become!
This salad is great as a side or by itself as a refreshing snack!
