Shaved Raw Beet Salad

with

 Warm Pecan Dressing

:: Dressing Ingredients ::

1/4 c. olive oil

1 shallot, minced

2 garlic cloves, minced

1/4 c. cider vinegar

2 tsp. honey

1/3 c. toasted & chopped pecans

pinch of salt & black pepper

:: Salad Ingredients ::

​

1-2 chioggia beets with greens

1 bunch Swiss chard, thinly sliced

Feta, or cheese of choice, for serving

:: Directions ::

​

-Combine oil, shallot, and garlic in small pan on medium heat. Cook until fragrant, ~5 min. 

​

-Whisk in vinegar and honey until well blended.

​

-Add pecans, salt, and pepper

​

- Thinly slice beets (we like to use a mandolin slicer), and beet greens.

​

-Toss beets and greens in warm dressing. 

​

-Sprinkle cheese on top

​

::: Note ::: 
Don't hesitate to improvise and use ingredients you have on hand!
Sometimes we add thinly sliced carrots or radishes to this salad.
Chioggia beets do seem to work best for their texture and beauty (we just love the striping).
