Beet PIZZA!

:: Dough Ingredients ::

3 c. white flour (may interchange 1 cup for flour of choice, we like to use Freedom Food Farm's local wheat or rye flour)

2 Tbsp olive oil

1 Tbsp sugar

1 c. warm water

2 1/4 tsp. yeast (equivalent to one packet)

:: Topping Ingredients ::

Tomato Sauce, to taste, approx. 1/4 cup

Mozzarella, or cheese of choice

1 medium beet, grated

:: Directions ::

- Mix sugar in 1c. warm water, and stir in yeast. Let rest for approximately 10 minutes, until yeast becomes foamy

- Combine flour and olive oil in large mixing bowl

- Stir in yeast mixture

- Preheat oven to 500 degrees F

- When dough ball begins form, hand knead until dough becomes smooth and round, approximately 5 minutes (add a small amount of flour or water to adjust consistency, if needed)

- At this stage, you may continue and make a thick crust pizza, or let the dough rest for approximately 1 hour, until it doubles in size, to make two thin to medium crust pizzas

-Stretch dough out and use a pastry roller to spread on greased pizza pan or cookie sheet (we love cast iron!)

- Ladle tomato sauce on dough, to your liking

- Add desired toppings and cook until crust becomes golden brown.

- Remove from oven and immediately sprinkle cheese on top (cheese will melt since pizza is hot)

Don't hesitate to improvise and use ingredients you have on hand!
Sometimes we add sautéed onions, mushrooms, or garlic to beet pizza.
Red beets do seem to work best for their texture and beauty.
